Knots and tangles happen in pockets, bags, and other containers for several reasons, mostly relating to how they’re being constantly shuffled around. There’s not a lot of mystery to it, there’s only one way a cable can be untangled, but nearly infinite ways it can be tangled. From a pure probability standpoint, it’s more likely that your headphones will be tangled than untangled at some point, provided you move them around and use them.
Basically, if you jostle around a cable that’s already kinda wound in on itself, the cables will move position, and sometimes interweave a bit. If you want to see the scientific experiment that details how knots can happen spontaneously with movement, click here.
